Dinnertime can be super stressful around here. First of all, I don’t like cooking. I just don’t enjoy it. Sometimes I’ll get a bee in my bonnet and go all out, but that’s pretty rare as of late. During the holiday season, we all feel like we barely have time to breathe, much less cook our family a decent meal.
So, when I saw that STOUFFER’S® was on rollback at Walmart this month I knew I had just found the solution for a good and easy meal. I love STOUFFER’S® because it’s made fresh and uses no preservatives. Not to mention, it’s absolutely delicious.
While I could certainly just eat lasagna and be content, I would definitely loose “good mom points” if I didn’t add in a veggie to the meal. So, what’s quick and easy? Asparagus!
Here’s how I did it:
Ingredients
STOUFFER’S® Family Size lasagna w/ meat & sauce
1 bundle asparagus
1 tsp olive oil
1 clove garlic
salt and pepper to taste
How to
Start by putting foil on half of your baking sheet and placing the STOUFFER’S® lasagna on the other side.
Go ahead and put this in the oven and cook according to the directions on the package.
While that’s cooking, prep your asparagus.
I always snap the bottoms off of the asparagus. The bottom is tough and doesn’t taste good, so just get rid of it. Then, mix in the oil, garlic, and salt and pepper.
Once there are about 30 minutes left on your lasagna, place the asparagus on the foiled side of the baking sheet.
Make sure the roll them over half-way through.
Finish cooking the lasagna according to the package’s directions.
Ta-da! You have a delicious and very easy meal for your family.
I love this as an option when I don’t have time to be in the kitchen for an hour making dinner. You can just pop it in the oven and do other things you need to do- like wrapping gifts or singing Christmas carols with your kids.
