Chances are most of us stocked up on fruit over the holiday weekend and you probably have a fridge full of leftover watermelon, strawberries and blueberries that are starting to go bad. Don’t worry, we’ve got you covered! Give those sad looking fruits new life with these no-added sugar, protein-packed popsicles! They’re a perfect afternoon snack for the whole family on hot afternoon.
Red White and Blue Popsicle
Makes 12 mini popsicles (as pictured) or 6 normal sized popsicles
Ingredients:
- Popsicle molds (or dixie cups and popsiclesticks)
- Red-
- 2 cups watermelon
- 1/2 cup fresh watermelon juice
- 1 cup strawberries (fresh or frozen)
- White-
- 1 cup vanilla Greek yogurt
- Blue-
- 1/4 cup blueberries
Instructions:
Place the watermelon and the watermelon juice in the blender and blend. Add the strawberries and yogurt and blend until smooth. Next, drop 4 or 5 blueberries in the bottom of your popsicle molds. Then, pour in your yogurt/fruit mixture. Put your popsicle tops (handles) back in the mold and place them in the freezer for 2 hours. Enjoy!
