I love the fall because of all of the opportunities to celebrate the season with activities, decorating, crafts and food. It’s a good thing that Halloween falls on the very last day of the month so we can get in all of the pumpkin picking, hayrides and festivals that our kids can stand before heading out the door to Trick or Treat. The same holds true for the oh so many spooky recipes out there for little ghouls and goblins. Luckily, I found one that’s more treat than it is a trick to make, and one you can easily carve into your busy holiday schedule.
Check out this super easy recipe for pumpkin pop tarts.
1 box of pre made pie crust dough
1/2 cup of pure pumpkin
2 tablespoons of sugar (I used coconut sugar, but you can use any kind or substitute honey)
1 teaspoon cinnamon
Makes 2 pumpkin pop tarts (Increase amount of pumpkin if using other pie crust in package, to make 4 pop tarts)
Preheat oven to 350 degrees
Roll out your pie crusts and cut the sides to form a square
Take your square and cut it into fourths, creating four equal pieces
Use a sharp knife to cut Jack-o-lantern faces into two of the dough squares
Mix pumpkin, sugar, egg and cinnamon
Spoon a spoonful and a half of pumpkin mixture onto the non cut dough squares
Add the designed squares on top and press dough together to form the pop tart
Make slits in the dough around the outside of each pop tart
Bake for 10-15 minutes
Top with powdered sugar or cinnamon and sugar (optional)
Let cool and serve
And there you have a perfect pumpkin breakfast. Add some spooky fruit and you have a kid friendly meal or snack!
