Ok, ladies, I am a goody-goody. I always hated being tardy to class as a kid, never wanted to sneak out during sleepovers as a teenager, and certainly couldn’t bring myself to play hooky as a working woman prior to becoming a mama. So, it should come as no surprise that I’m a by-the-book cook. I love following a recipe and, therefore, have a true adoration for a good cookbook.
So, I can’t tell you how excited I was to learn that one of my sweet friends I’ve made here in Franklin since moving to town has JUST released a cookbook of her own! April, a fellow Nashville Mom, is a true gem and is so gifted in the kitchen, not to mention that she’s cooked live on the TODAY show! Talk about being my hero!
I knew right away when I heard that her book The Outdoor Table focuses on dishes that can be served during a back patio dinner, city park picnic, or tailgate that this book was going to speak to me. And boy, does it ever! I’ve spent lots of time pouring over its pages, (and then subsequently wiping away the drool marks I’ve left behind) and have to say that there is something for EVERYone!
The recipes in The Outdoor Table range from breakfast to breads to salads, main dishes, and cocktails. There are simple recipes that you can whip together in a flash, as well as more complex, sweet & savory dishes that happen to be one of April’s trademarks. I chose just a handful of recipes to try last week and they were each completely delicious in their own way!
Candied Corn & Okra Salad
Bacon Wrapped Hashbrown Bites
Ok, these little bacon/potato/cheese bites are the perfect breakfast poppers. I whipped these up on a Saturday morning when we had company in town and they were literally devoured in minutes. I never would’ve thought to cook bacon in a muffin tin, but it was perfectly crispy and delicious!
“Mac & Cheese” Picnic Pasta
Finally, I had the perfect opportunity to put my copy of The Outdoor Table to use as some friends and I went to Arrington Vineyards with the ladies from our church one evening this week. And the cherry on top is that April was there, and I got to share the dish with her! I’m proud to say that she approved of my cooking and everyone there loved her “Mac and Cheese” Picnic Pasta!
Beyond the amazing food, The Outdoor Table has some super helpful guides that any Mom can appreciate. Each recipe contains icons that correspond with a key at the front of the book. They let you know, at a quick Mom-speed glance, if the recipe is good on the go, if you should cook it on the grill, etc.
The pages are also sprinkled with different outdoor events that take place across the country that serve as the perfect back drop for certain recipes. How cool is that!?
I hope you can tell that I am a big fan of this cookbook! The recipes are easy-to-follow, have a bent toward healthy comfort food (win-win right there!), and above all else, are delicious.
